I noticed today in Hardy Heron that Sound Juicer doesn't come with an option to encode mp3 by default. To most, this would seem obvious; the mp3 codec isn't installed. But, the trick is knowing what package has that bugger.
sudo apt-get install gstreamer0.10-plugins-ugly-multiverse
Restart Sound Juicer (or other Gnome Audio Profile app) and you will have the option under preferences.
